  • Bison (American Buffalo) played a large role in the history of the Old West. Today, it is the nutritional choice in red meat for informed customers. Bison has often been called the “original health food”. It is significant higher in protein that most other meats (including poultry and some types of fish), yet lower in calories, fat, and cholesterol. Bison are not subjected to drugs, chemicals, or growth hormones. They are handled as little as possible with limited, if any time in feedlots. There are no known allergies to Bison.
  • Taste – It tastes great! Most People feel that Bison is the most flavorful meat they have ever tasted, with a sweeter and richer flavor than beef. It is not “gamey” or wild tasting. Bison meat is naturally flavorful, tender and tastes great by itself, or will enhance your favorite recipe. It can be prepared much the same as beef without special handling.
  • Value – On a cost comparison, Bison falls into the gourmet (premium) category at your supermarket or specialty market. The value of Bison is not for what you pay, but it is for what you get in return. Nutritionally, you are getting more protein and nutrients with fewer calories and less fat. Bison is dense meat, which tends to satisfy you more while eating less.
  • Health – Due to their independent nature, Bison are handled as little as possible. They spend their lives on grass, much as they always have, with little time actually spent in a feedlot; therefore, there is no need for artificial growth stimulants, questionable drugs, chemicals, or hormones. Bison meat fits the dietary recommendations of the American Heart Association, and is now
    being recommended by physicians to heart patients and others who must limit their cholesterol intake.
  • Nutrition – Research begun by Dr. M. Marchello at the University of North Dakota has shown that the meat from Bison is a highly nutrient dense food because of the proportions of protein, fat, minerals, and fatty acids to its caloric value. Comparisons to other meat sources have also shown that Bison has a greater concentration of iron as well as other essential fatty acids necessary for human well being.
